    Information from restaurant managers on criteria and actions related to sustainability management in a tourist route in Serra Gaúcha, Brazil

    Purpose – The study aims to analyze the level of importance of different criteria/actions related to sustainability management for restaurant managers on a tourist route in Serra Gaúcha (RS), Brazil.

    Design/methodology/approach – The research, characterized by it’s exploratory and descriptive nature, use descriptive statistical analysis. Interviews were used as a data collection technique. Interviews were carried out with restaurant managers in the route.

    Findings – The main results highlight the relevance of criteria and actions related to sustainability actions considering the environmental dimension and the implantation of technological innovations. Of lesser importance, was verified information related to the periodic assessment to identify social performance, environmental certification and the local community satisfaction survey. The need to strengthen partnerships between restaurants, educational institutions, trade unions and specialized companies stands out, in order to strengthen research and training on sustainability in the tourism chain.

    Research limitations/implications – As a limitation of the research, due to data collection focusing on a single tourist itinerary with seven restaurants, the data cannot be generalized. However, the results allow us to identify the level of importance of different sustainability management criteria and actions, contributing to the formulation of sustainability indicators.

    Practical implications – The research shows that restaurant managers consider that sustainability is strongly related to environmental criteria. In turn, the social and economic axes are not clearly perceived, which indicates the possibility of carrying out partnerships and research to demonstrate the relevance for the management of gastronomic establishments.

    Originality/value – This article contributes to the development and consolidation of management for sustainability in gastronomic services.
